OpenSSH's sftp logging is turned on on by specifying "-l" to sftp-server.
Trying making the "Subsystem sftp" line in sshd_config look something
like the following and then restart sshd.
Subsystem sftp /usr/libexec/sftp-server -l VERBOSE
