Leave off the -E or -e options then and the logging will go to the usual 
place(s).  However, that will pollute your main log with a lot of noise. 
  Thus the recommendation to log the separate instance of sshd 
separately using -E.

/usr/sbin/sshd -p 2222 -E /tmp/sshd.log -d -d -d

That will set up a one-off instance to capture the entirety of a single 
test session to the file assigned by the -E option.  Nothing more is 
included in the file and none of it then goes to the system log.  It 
will use the default configurations except for the port, log 
destination, and log level.
